Élevage is thrilled to announce that Jade has produced a unique new cuvée just for Poon’s, designed to pair with Amy’s Cantonese home cooking.
Élevage will join Jade, Amy and Michael for the inaugural launch of this singular wine on the 21st of April at Poon’s, with a bespoke menu crafted by Amy and Jade to celebrate this collaboration.
For Jade this moment marks a perfect circle, with the menu incorporating influences of the Shanghainese cuisine of her childhood, recalling her previous illustrious culinary career as Head Chef at Mugaritz, and converging onto her present as a winemaker in Rioja.
In addition to the launch of the new Eight Bunches cuvée, the dinner will also feature the new vintages of Jade’s whites (2025) and reds (2023) which have only just landed in the UK. The list of wines will include the ultra rare Moon Rocket White 2025 and the stunning and rarely seen Jabalina rosé 2025.

This marks Jade’s first foray into Graciano, the sinuously perfumed, spicy and earthy variety with high acidity and high tannins which has long been seen in the region as a troublesome burden in the vineyard (it is tricky to grow, low yielding and susceptible to many diseases), and as a minor blending component in the winery, but is finally being taken seriously in its own right.
Eight Bunches is an equal blend of Tempranillo from La Cantera and Graciano from Cuba Negra, both sites of 40 year old bush vines on limestone clay at 600 metres above sea level in Rioja Alavesa. The varieties were fermented separately and then blended into a French oak barrique for 15 months, followed by a further 14 months resting in bottle. It combines the satiny elegance of Tempranillo with the fresh and floral vibrancy of Graciano, mellowed through elevage and bottle age into a wine of great poise.
In Jade’s words, ‘this cuvée, crafted as a dedicated expression for Amy Poon, is a study in detail - thoughtfully composed, quietly complex, and deliberately made.‘
